- 3 tablespoons butter
- 2 shallots, finely minced
- 1/2 cup sour cream
- 1/4 cup heavy cream
- 1 tablespoon lemon juice
- 1 teaspoon fresh thyme leaves
- 8 ounces fettuccine pasta
- 2-3 tablespoons caviar
- 1/2 teaspoon grated lemon zest
When water comes to a boil, add pasta and cook. Add sour cream and heavy cream to the shallot mixture and cook until mixture just begins to simmer. Remove from heat.
When pasta is al dente, drain, reserving 1/2 cup cooking liquid. Return skillet to medium heat. Add lemon juice and thyme to sour cream mixture, then add pasta. Add enough pasta cooking water to make a sauce.
Remove from heat and add half of the caviar; toss gently. Place on serving platter and garnish with remaining caviar and lemon zest; serve immediately. Serves 2-3
