Pasta with Caviar

Pasta with Caviar

Linda Larsen
Pasta with Caviar is an easy and elegant recipe that uses just a few ingredients. Buy the best caviar you can find (and afford) for this dish.

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Yield: Serves 2-3

  • 3 tablespoons butter
  • 2 shallots, finely minced
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • 1 tablespoon lemon juice
  • 1 teaspoon fresh thyme leaves
  • 8 ounces fettuccine pasta
  • 2-3 tablespoons caviar
  • 1/2 teaspoon grated lemon zest

Bring a large pot of water to a boil. Meanwhile, in large skillet melt butter over medium heat. Add shallot; cook and stir until tender, about 4-5 minutes.

When water comes to a boil, add pasta and cook. Add sour cream and heavy cream to the shallot mixture and cook until mixture just begins to simmer. Remove from heat.

When pasta is al dente, drain, reserving 1/2 cup cooking liquid. Return skillet to medium heat. Add lemon juice and thyme to sour cream mixture, then add pasta. Add enough pasta cooking water to make a sauce.

Remove from heat and add half of the caviar; toss gently. Place on serving platter and garnish with remaining caviar and lemon zest; serve immediately.

Good even with inexpensive caviar!, Guest Angela

My husband and I really enjoyed this recipe; even though I used supermarket caviar. The sour cream and thyme make it flavorful and rich. This is definitely a great recipe for Valentine's Day!
