Pesto Pasta

Pesto Pasta

Linda Larsen
Make your own pesto for this easy and delicious recipe if you like. When I took the picture, I used these fabulous heirloom cherry tomatoes I found at my co-op.

Prep Time: 2 minutes

Cook Time: 8 minutes

Total Time: 10 minutes

Yield: 4 servings

Ingredients:

  • 1 lb. uncooked linguine pasta
  • 12-oz. container refrigerated basil pesto
  • 3 tablespoons heavy cream
  • 2 cups grape tomatoes
  • 1/2 cup grated Parmesan cheese

Preparation:

Cook pasta as directed on package; drain, reserving 1/3 cup pasta cooking water, and return pasta to pot. Stir in basil pesto and cream, tossing gently over low heat until pasta is coated, adding reserved pasta water as necessary to make a sauce. Add grape tomatoes and toss for 1 minute. Sprinkle with cheese and serve.

Pesto pasta, Guest Selma

I make this all the time, but I use pesto sauce that I make myself and freeze in ice cube trays. I also use cherry tomatoes that I grow in a large pot in my front yard. Its quick, easy and everyone loves it. It's my standby meal when I have only a few minutes to prepare dinner.
