Crazy Crust

By Linda Larsen, About.com

This is a recipe for a pizza crust. Make this batter pizza crust and top it with any of your favorite toppings. There's a trick to this recipe - the pizza sauce and cheese are put over the toppings AFTER the crust has baked for 20 minutes so it will set properly. The crust gets chewy as this pizza bakes, making a wonderful version of a thick crust pizza. top it with cooked hamburger, pork sausage, cooked onions and green bell peppers, Canadian bacon, and then drizzle with about a cup of pizza sauce and sprinkle with 1-2 cups of grated cheese.

Prep Time: 15 minutes

Cook Time: 30 minutes

Ingredients:

  • 1-1/2 cups flour
  • 1/4 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 tsp. baking soda
  • 1/8 tsp. pepper
  • 1/3 cup milk
  • 1/3 cup buttermilk
  • 2 eggs, beaten
  • 1 cup cooked toppings
  • 1 cup pizza or tomato sauce
  • 1-2 cups grated cheese

Preparation:

Preheat oven to 425 degrees. Lightly grease and dust with flour a 14" round pizza pan or a 15x10" jelly roll pan. Set aside. In large bowl combine dry ingredients. Add milk, buttermilk, and eggs and mix just until combined. Pour batter into prepared pan, tilting pan as necessary so batter covers bottom of pan.

Sprinkle your favorite cooked toppings, except for pizza sauce and cheese, over batter and bake at 425 degrees for 20-25 minutes until crust is golden brown. THEN drizzle with desired pizza sauce and sprinkle with cheese. Bake 10-15 minutes longer until crust is deep golden brown and toppings are thoroughly heated.
