Meatless Crazy Crust Pizza

This vegetarian version of the original Crazy Crust Pizza is very delicious.

Prep Time: 25 minutes

Cook Time: 35 minutes

Ingredients:

  • 1 Tbsp. olive oil
  • 1 onion, chopped
  • 12 oz. pkg. precooked frozen ground beef substitute crumbles
  • 1/2 cup pizza sauce
  • 1-1/2 cups flour
  • 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. dried Italian seasoning blend
  • 1/8 tsp. pepper
  • 2/3 cup milk
  • 2 eggs, beaten
  • 4 oz. can sliced mushrooms, drained
  • 1-1/2 cups pizza sauce
  • 2 cups shredded mozzarella cheese

Preparation:

Preheat oven to 425 degrees. Cook oil and onion in a heavy saucepan over medium heat until onion is tender. Add frozen crumbles and 1/2 cup pizza sauce and simmer for 4 minutes, stirring frequently. Set aside. Lightly grease 14" round pizza pan and dust with flour. Set aside.

In medium bowl combine flour, baking powder, salt, seasoning blend and pepper and mix well. Add milk and eggs and stir just until smooth. Pour batter into prepared pan, tilting pan as necessary so batter covers bottom of pan. Spoon 'beef' mixture and drained mushrooms over batter.

Bake at 425 degrees for 20-25 minutes until pizza is golden brown. Remove pizza from oven, drizzle with 1-1/2 cups pizza sauce and sprinkle with shredded cheese. Return to oven for 12-18 minutes until crust is deep golden brown and cheese is melted.
