Plum jelly, chili sauce, and lemon juice season shrimp in this easy stir fry pizza recipe. Use Crisp Pizza Crust recipe instead of the Boboli crusts if you like.

Ingredients:
- 1 Boboli® pizza or 1/2 Yeast Crust Recipe
- 1/2 pound medium raw shrimp
- 1/4 cup plum jelly
- 1/4 cup chili sauce
- 1 tsp. lemon juice
- 1 cup sliced mushrooms
- 1 onion, chopped
- 1 cup shredded Monterey Jack cheese
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons grated Parmesan cheese
Preparation:
Make and prebake crust, if using.
Preheat oven to 425 degrees. In small saucepan, combine plum jelly, chili sauce, and lemon juice. Bring to a boil, then reduce heat and simmer 5 minutes until thickened, stirring frequently. Spread on Boboli® crust or partially baked homemade crust.
In large skillet, saute shrimp, mushrooms, onion in oil for 4-6 minutes, until shrimp curl and turn pink. Drain mixture and sprinkle over sauce on the pizza crust. Top with shredded cheeses and bake at 425 degrees for 8-14 minutes until crust is golden brown and cheese is melted. Serves 4
