Thick Pizza Crust

This recipe for thick, or deep dish pizza crust, is easy and classic. Make it in a Pizza Pan for best results.

Prep Time: 20 minutes

Cook Time: 30 minutes

Total Time: 50 minutes

Yield: 1 pizza; 6 servings

Ingredients:

  • 2 pkgs. active dry yeast
  • 4 cups flour
  • 1/2 cup warm water
  • 1 tsp. salt
  • 1 cup warm water

Preparation:

In large bowl, combine yeast, 1/2 cup flour, and warm water in a bowl and mix well. Cover and place in warm, draft-free place; let rise for 30 minutes. Stir down batter. Add 2 cups flour, salt, and 1 cup warm water and beat well. Gradually add enough of the remaining flour to form a soft dough. Turn down onto a lightly floured board and knead for 10 minutes. Place dough in a greased bowl, turning to grease top. Cover and let rise until double, about 1 hour.

Punch down dough and roll to 16" round. Place in greased 14" round deep dish pizza pan and form a raised edge. Let dough rise for 30 minutes. Then top with desired toppings and bake at 425 degrees for 20-30 minutes until crust is deep golden brown.

So, I tried this recipe, and it's great. It comes out fantastically. But, I do have one complaint, and it's not anything to do with the food, but just this article. The prep time claimed at the top of the page is 20 minutes. If you read through the recipe, you'll see that the prep time is actually upwards of two hours. I wish that would be corrected, because if I was told on short notice that my parents were coming over, I might make a recipe whose prep time is 20 minutes. I would not make a recipe whose prep time is six times that. But other than that inaccuracy, I have no complaints about this recipe. It's not like it is from the pizzeria (I live in NYC, so it's hard to compete with them), but for homemade pizza, this is probably the best I've ever had. -Tim
