Juicy Grilled Pork Chops

Pork chops cooked on the grill are a real treat. This easy recipe marinates the chops in a sweet and savory mixture, then grills them to juicy perfection. The salad in the photo, by the way, is Pesto Succotash.

Prep Time: 5 minutes

Cook Time: 12 minutes

Total Time: 17 minutes

Yield: 4 servings

Ingredients:

  • 3 tablespoons low sodium soy sauce
  • 3 tablespoons packed brown sugar
  • 2 tablespoons Dijon mustard
  • 1/3 cup water
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 (1-inch thick) boneless pork loin chops

Preparation:

Combine all ingredients except pork chops in shallow bowl and mix well. Add pork chops and turn to coat. Cover and refrigerate for 30 minutes up to 8 hours.

When ready to cook, prepare and preheat grill, building a two level fire. Remove the chops from the marinade; discard marinade.

Place chops on hottest part of grill and cook for 1-2 minutes. When the chops release, turn them and sear on the second side, for 1-2 minutes.

Then move the chops to the cooler part of the grill. Cover and grill for 4 minutes. Turn the chops and cover; grill for 4-6 minutes longer or until a meat thermometer registers 145 to 150 degrees F.

Remove chops from grill, place on serving plate, and cover. Let stand 5-10 minutes, then serve.

This marinade is incredible. The chops were so juicy, just as described! I'm going to use the marinade on pork tenderloin and chicken breasts too. Definitely going on my rotation!
