Ingredients:
- 2-3 lb. pork boneless loin roast
- 1-1/2 cups mixed dried fruit including apricots
- 1 cup apricot nectar
- 2 Tbsp. apple cider vinegar
- 2 tsp. curry powder
- 1/2 tsp. salt
- 1/4 tsp. pepper
Preparation:
Place pork in 3-4 quart slow cooker and top with fruit. Pour apple juice and vinegar over pork and sprinkle with curry powder, salt, and pepper. Cover crockpot and cook on low for 7-9 hours until pork is tender. 8 servings
If you have a new, hotter cooking crockpot, check the pork after 6 hours on low.
