Crockpot Fruited Pork


Just four ingredients make the most wonderful rich and hearty pork dinner recipe.

Prep Time: 10 minutes

Cook Time: 8 hours

Total Time: 8 hours, 10 minutes

Yield: 8 servings


  • 2-3 lb. pork boneless loin roast
  • 1-1/2 cups mixed dried fruit including apricots
  • 1 cup apricot nectar
  • 2 Tbsp. apple cider vinegar
  • 2 tsp. curry powder
  • 1/2 tsp. salt
  • 1/4 tsp. pepper


Place pork in 3-4 quart slow cooker and top with fruit. Pour apple juice and vinegar over pork and sprinkle with curry powder, salt, and pepper. Cover crockpot and cook on low for 7-9 hours until pork is tender.

If you have a new, hotter cooking crockpot, check the pork after 6 hours on low.
