BBQ Pork and Coleslaw

You can find fully cooked shredded pork in BBQ sauce in the meat department of your grocery store. You can make your own coleslaw if you'd like. Also, split cornbread can be substituted for the corn muffins.

Prep Time: 15 minutes

Ingredients:

  • 16-ounce package fully cooked shredded BBQ pork
  • 4 corn muffins or large cornbread pieces
  • 1 cup creamy deli coleslaw

Preparation:

Place pork in 8" microwave-safe dish and cover with microwave-safe waxed paper. Heat on high for 7-9 minutes or until hot, stirring once, OR heat according to package directions.

To serve, split corn muffins or cornbread pieces and place two halves on each plate. Spoon hot barbecued pork over muffins and top with coleslaw; serve immediately. Serves 4
