Skillet Pork and Peppers

This delicious and easy dish is packed full of nutrition.

Prep Time: 20 minutes

Cook Time: 12 minutes

Ingredients:

  • 1/2 cup orange juice
  • 2 Tbsp. low sodium soy sauce
  • 1 Tbsp. honey
  • 1 Tbsp. cornstarch
  • 1/2 tsp. ground ginger
  • 1 Tbsp. olive oil
  • 1 pork tenderloin, sliced 1/4" thick
  • 1 green bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red bell pepper, chopped

Preparation:

Combine orange juice, soy sauce, honey, cornstarch and ginger in small bowl and mix to blend. Set aside.

Heat oil in large skilet and add pork; stir fry for 4 minutes until pork is no longer pink. Add peppers and stir fry 3-4 minutes longer until peppers are crisp-tender. Add orange juice mixture and bring to a boil. Simmer 1 minute until sauce is thickened, stirring constantly. Serve over hot cooked rice or couscous. Serves 4
