Regina's Pork Roast

This super simple recipe uses herbs to add wonderful flavor to a tender pork roast. The roast is cooked until 155 degrees because the temperature will continue to rise when it's out of the oven.

INGREDIENTS:

  • 4 lb. boneless pork loin roast
  • 3 Tbsp. olive oil
  • 1 tsp. dried thyme leaves
  • 1 Tbsp. minced garlic
  • 1/2 tsp. pepper

PREPARATION:

Place roast in shallow roasting pan. In small bowl, combine remaining ingredients and mix to make a paste. Rub over the roast. Let stand for 30 minutes.

Preheat oven to 450 degrees. Roast pork for 20 minutes, then reduce heat to 250 degrees without opening the oven door. Roast the pork until the internal temperature registers 155 degrees, about 23-30 minutes per pound. Let roast stand, covered, 5-10 minutes before carving.

You can also roast the pork at 350 degrees for 20-25 minutes per pound, until the internal temperature registers 155 degrees. 8-10 servings
