Pork Fried Rice

This simple stir fried recipe is so delicious; the flavors have a true depth with pork loin, bacon, and mushrooms.

INGREDIENTS:

  • 3/4 lb. boneless pork loin
  • 5 slices bacon
  • 1 onion, chopped
  • 1 cup chopped mushrooms
  • 2 eggs
  • 3 cups cold cooked rice
  • 2 tablespoons low sodium soy sauce
  • 3 tablespoons chicken broth

PREPARATION:

Slice pork across the grain into 2" strips and set aside. In large skillet, cook bacon until crisp; remove and drain on paper towels. Crumble bacon and set aside.

Remove all but 2 Tbsp. drippings from the pan. Add pork and stir fry until browned. Remove pork from skillet. Add onion and stir fry for 3-4 minutes until onion is almost tender. Add mushrooms and stir-fry 2-3 minutes until all vegetables are crisp-tender.

Beat eggs in small bowl and add to skillet; cook, stirring, until eggs begin to set. Add cooked pork, bacon, and rice to skillet and stir-fry for 2-3 minutes, stirring gently, until eggs are set. Add soy sauce and broth and cook 2-3 minutes longer until hot. 4 servings
