INGREDIENTS:
PREPARATION:Slice pork across the grain into 2" strips and set aside. In large skillet, cook bacon until crisp; remove and drain on paper towels. Crumble bacon and set aside.
Remove all but 2 Tbsp. drippings from the pan. Add pork and stir fry until browned. Remove pork from skillet. Add onion and stir fry for 3-4 minutes until onion is almost tender. Add mushrooms and stir-fry 2-3 minutes until all vegetables are crisp-tender. Beat eggs in small bowl and add to skillet; cook, stirring, until eggs begin to set. Add cooked pork, bacon, and rice to skillet and stir-fry for 2-3 minutes, stirring gently, until eggs are set.
