Southwest Pork Kabobs

Yum - juicy pork is marinated in spicy seasonings, then grilled or broiled with vegetables to perfection in this easy five ingredient recipe.

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

Ingredients:

  • 4 boneless pork loin chops, cut into 1" pieces
  • 1 tablespoon chili powder
  • 1 tsp. cumin
  • 1/8 tsp. cayenne pepper
  • 1/2 tsp. salt
  • 3 Tbsp. olive oil
  • 1 tablespoon red wine vinegar
  • 2 red bell peppers, cut into strips
  • 1 red onion, cut into wedges
  • 16 button mushrooms
  • 1 yellow squash, thickly sliced

Preparation:

In medium bowl, place cubes of pork. In small bowl, combine seasonings with olive oil and red wine vinegar and mix well. Pour over pork, toss to coat, then cover and refrigerate for 2-8 hours.

When ready to cook, prepare and preheat grill or preheat broiler. Thread pork cubes alternately with vegetables on 8" metal skewers. Grill or broil skewers 4-6" from medium heat source for 14-18 minutes, turning once and brushing frequently with reserved marinade, until pork is cooked and vegetables are tender. Discard remaining marinade. Serves 4

Why not...., Member a_l_bailey80

... go ahead and marinate the veggies too? I cut them up at the same time, then threw them into a separate gallon ziplock bag and tossed in a 2nd round of the marinade. This was a great recipe, although next time I'll skip making my own and use a healthy store-bought marinade to save time.
