This excellent recipe is packed full of flavor. The sour cream added at the end makes the dish so rich and creamy.

Ingredients:
- 1 Tbsp. olive oil
- 1 lb. pork tenderloin, cut into 1" pieces
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 4 cups uncooked farfalle (bow tie pasta)
- 1/2 cup water
- 2 Tbsp. sugar
- 1 Tbsp. chili powder
- 1/2 tsp. salt
- 2 (14.4-oz.) cans diced tomatoes
- 8 oz. can tomato sauce
- 1 cup sour cream
- 2 Tbsp. cornstarch
Preparation:
In heavy skillet, cook pork tenderloin pieces, onion, and garlic in olive oil until tenderloin pieces are lightly browned. Add green pepper and cook another 3 minutes. Add remaining ingredients except sour cream and cornstarch.
Heat to boiling and reduce heat. Cover and simmer about 20 minutes, stirring frequently, until pasta is tender. In small bowl, combine sour cream and cornstarch; stir into skillet. Heat a few minutes until thickened, but do not boil. Serves 6
