Ingredients:
- 2 tablespoons olive oil
- 1 teaspoon dried thyme leaves
- 2 tablespoons chicken broth
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 (2-pound) boneless center cut pork loin roast
- 1/2 cup shredded Parmesan cheese
- 1/4 cup grated Parmesan cheese
Preparation:
Preheat oven to 375 degrees F. In small bowl, combine olive oil, thyme, chicken broth, salt, and pepper. Roll pork in this mixture, then roll in both types of Parmesan cheese to coat.
Place pork on a roasting pan and sprinkle with any remaining cheese. Roast, uncovered, for 40-50 minutes until internal meat thermometer registers 155 degrees F. Remove pork from pan, cover, and let stand 10 minutes before slicing. Serves 8
