Lemon Thyme Pork Tenderloin

Lemon Thyme Pork Tenderloin is a wonderful recipe for entertaining. It's so easy, and has the most wonderful flavor and moist and tender texture.

Prep Time: 5 minutes

Cook Time: 45 minutes

Total Time: 50 minutes

Yield: Serves 6

Ingredients:

  • 2 (1-pound) pork tenderloin, trimmed
  • 1/2 cup lemon juice
  • 1 teaspoon grated lemon zest
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/8 teaspoon white pepper
  • 1-1/2 teaspoons dried thyme leaves

Preparation:

Pierce the tenderloin all over with a fork and place in baking dish. Mix remaining ingredients and pour over pork. Cover and marinate in the refrigerator for 2-24 hours, turning pork once or twice. Or just let the pork marinate at room temperature for 15 minutes.

When ready to cook, preheat oven to 350 degrees F. Place meat on shallow baking pan, at least 2" apart. Roast for 40-45 minutes until pork registers 155 degrees F on a meat thermometer. Let stand 5 minutes, then slice to serve. Pork will be light pink in the center.

My husband really loves pork and I love lemon so I thought I'd try this. WOW! The lemon makes the pork really tender. I used fresh thyme leaves instead of dried. The two of us ate almost the whole thing. I had the rest the next day for lunch in a sandwich.
