Ingredients:
- 2 (4.9-ounce) packages dry scalloped potato mix
- 3 cups boiling water
- 1-1/4 cups milk
- 1 cup sour cream
- 1/4 cup grated Parmesan cheese
Preparation:
Preheat oven according to package directions. In a 3-quart casserole, combine sauce mix packets and boiling water and stir with a whisk until smooth. Add the milk, then whisk in the sour cream until smooth. Add the dry potatoes and stir.
Bake according to package instructions, usually around 25-35 minutes. Ten minutes before the potatoes are done, remove from oven and sprinkle with Parmesan cheese. Return to oven and bake until potatoes are tender and top is golden brown. Serves 8
