Meatballs and Fries Casserole

Meatball and Fries Casserole is an easy and delicious main dish recipe that uses frozen precooked meatballs, Alfredo sauce, and frozen French fries.

Prep Time: 15 minutes

Cook Time: 55 minutes

Total Time: 1 hour, 10 minutes

Yield: Serves 6

Ingredients:

  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon butter
  • 1 (16-ounce) package frozen precooked meatballs, thawed
  • 1 (15-ounce) can diced tomatoes
  • 1 (16-ounce) jar Alfredo sauce
  • 2 tablespoons milk
  • 2 tablespoons ketchup
  • 2 tablespoons mustard
  • 1-1/2 cups shredded Colby cheese
  • 3 cups frozen French fries
  • 1/3 cup grated Parmesan cheese

Preparation:

Preheat oven to 375 degrees F. In medium saucepan, combine onion, bell pepper, garlic, and butter; cook for 4-6 minutes until tender, stirring frequently. Add frozen meatballs; bring to a simmer and cook for 5-7 minutes until meatballs are thawed. Add undrained tomatoes and bring to a boil. Add Alfredo sauce and bring to a simmer. Add milk to Alfredo sauce jar, close jar, and shake; add this mixture to the skillet. Simmer 2 minutes.

Remove from heat and add Colby cheese; cook and stir until cheese is melted.

Pour mixture into a 2-1/2 quart to 3 quart casserole dish. Top with frozen French fries and sprinkle with Parmesan cheese.

Bake, uncovered, for 45-55 minutes or until casserole is bubbly and potatoes are golden and crisp.
