Quick Swedish Meatballs

There's really no recipe more comforting than this one. And it takes just a few minutes to prepare! Serve over hot cooked rice or egg noodles with Peas and Carrots.

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Yield: 4-6 servings

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (8-ounce) package mushrooms, sliced
  • 1 (16-ounce) package frozen wild rice meatballs
  • 1 (16-ounce) jar Alfredo sauce
  • 2 tablespoons milk
  • 1/3 cup sour cream

Preparation:

In large skillet, heat olive oil over medium heat. Add onion and garlic; cook and stir for 2 minutes. Add mushrooms; cook and stir for 4-5 minutes until mushrooms start to brown.

Add meatballs; cook, stirring occasionally and shaking pan, until meatballs are no longer frozen, about 10 minutes.

Add Alfredo sauce to pan. Pour milk into Alfredo sauce jar; put cap on lid tightly and shake. Pour this mixture into pan. Bring to a simmer. Simmer, stirring frequently, for 5 minutes until meatballs are hot.

Stir sour cream into meatball mixture and serve immediately over hot cooked rice or egg noodles.

Perfectly wonderful, Guest Sandy

This recipe is one of my favorites. It's so easy to make. I like to serve it over brown rice for more texture and flavor. I sometimes add a red bell pepper for some holiday color. Thanks!
