Swiss Crockpot Meatballs

I love the combination of foods in this easy crockpot main dish recipe.

Prep Time: 15 minutes

Cook Time: 7 hours

Total Time: 7 hours, 15 minutes

Ingredients:

  • 1 cup brown rice
  • 1 onion, chopped
  • 2-1/2 cups water
  • 10 oz. can cream of mushroom soup with roasted garlic
  • 40 frozen cooked meatballs
  • 1 cup frozen spinach, thawed and well drained
  • 2 cups shredded Swiss cheese

Preparation:

Place rice and onion in bottom of 3-4 quart crockpot and stir to blend. Stir in water and soup until combined. Then add meatballs. Cover and cook on low for 6 hours. Stir. Add spinach; cook on low for 30 minutes. Then stir in cheese, cover and cook 30 minutes on low until rice is tender, liquid is absorbed, and cheese is melted. Serves 4-6

If you have a new hotter cooking crockpot, cook on low for 4 hours, then add spinach; cook 20 minutes. Add cheese; cook for 10-15 minutes until melted.
