Crockpot Meatball and Potato Stew

This hearty and delicious stew recipe is so easy to make and cooks all by itself all day in your crockpot.

Prep Time: 20 minutes

Cook Time: 10 hours

Ingredients:

  • 40 frozen meatballs
  • 6 potatoes, peeled and sliced
  • 16 oz. bag baby carrots
  • 3 (14 oz). can ready to serve chicken broth
  • 1 Tbsp. dried parsley flakes
  • 1 tsp. dried Italian seasoning
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 12 oz. can evaporated milk
  • 3 Tbsp. cornstarch

Preparation:

Put all ingredients except evaporated milk and cornstarch in a 3-4 quart crockpot. Cover and cook on low 10-12 hours. Mix evaporated milk and cornstarch; add during last hour and cook until thoroughly heated and thickened. 4-6 servings
