Pesto Meatballs with Spaghetti

This delicious and hearty main dish pasta skillet recipe takes just minutes to put together and serve. You can use Easy Meatballs instead of purchased ones if you'd like. The last time I made this I used chicken meatballs and a frozen green bean and baby carrot combo.

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

Yield: Serves 4 to 6

Ingredients:

  • 1 lb. frozen cooked meatballs or one batch Easy Meatballs
  • 12 oz. pkg. spaghetti pasta
  • 16 oz. pkg. frozen bell pepper and onion stir fry mix
  • 1 Tbsp. olive oil
  • 12 oz. container refrigerated pesto
  • 1 cup half and half

Preparation:

Bake meatballs as directed on package or in recipe. Set aside. Cook spaghetti as directed on package. Drain and set aside.

Meanwhile, in large skillet cook bell pepper and onion stir fry as directed on package, about 7-9 minutes. When cooked, stir in meatballs, cooked and drained fettuccine, pesto, and half and half. Cook over medium heat for a few minutes, stirring constantly, until mixture is hot.

Wow, this was good! I make pesto in the summer and freeze it, so I used my own homemade. And I used fresh bell peppers and onions I sliced and cooked in some olive oil. The whole family devoured it!
