Cherry Oat Muffins

Make muffins special with oatmeal, oat bran, and real cherries.

Prep Time: 25 minutes

Cook Time: 18 minutes

Total Time: 43 minutes

Ingredients:

  • 1 cup oatmeal
  • 1 cup oat bran
  • 2/3 cup brown sugar
  • 1 cup flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 cup safflower oil
  • 1 cup buttermilk
  • 2 eggs
  • 1-1/2 cups halved and pitted fresh or frozen cherries (do not thaw if frozen)

Preparation:

Preheat oven to 375 degrees. Line muffin tins with paper liners. In large bowl, combine oats, oat bran, brown sugar, flour, baking powder and baking soda and mix well. In another bowl, combine oil, buttermilk, and eggs and mix with fork until blended. Add wet ingredients to dry ingredients and mix 20-30 strokes just until dry ingredients disappear. Gently stir in cherries. Batter should be lumpy.

Fill prepared muffin tins 2/3 with batter and bake at 375 degrees for 17-20 minutes until light golden brown. 18 muffins

I found these muffins to be very filling, not too sweet and had a nice texture. I did however use turbino sugar rather than white sugar because of diabetic issue. Also used fresh cherries. Would recommend this recipe.
