Popovers

Popovers are an excellent, easy quick bread for any meal. Be sure to read Popover Science to learn tips and tricks.

Prep Time: 15 minutes

Cook Time: 45 minutes

Ingredients:

  • 3 eggs, at room temperature
  • 1-1/4 cups whole milk, at room temperature
  • 1-1/4 cups flour
  • 1/4 tsp. salt

Preparation:

Preheat oven to 450 degrees. Generously grease 10 popover cups or ten 6-oz. custard cups (and I mean generously!). You could try using the baking spray with flour in it as well.

In small bowl, beat eggs with an egg beater until lemon colored and foamy. Add milk and mix well. Blend in flour and salt and beat with the egg beater just until blended and the batter is smooth and foamy. Pour batter into greased cups, filling about 2/3 full.

Bake at 450 degrees for 15 minutes - do NOT open the door during this time! Reduce heat to 350 degrees and bake for 25-35 minutes longer until popovers are high, hollow, and deep golden brown. Remove from pan immediately and serve hot with butter.
