Surprise Muffins

You can use any flavor of jam you'd like in this simple breakfast muffin recipe.

Prep Time: 20 minutes

Cook Time: 25 minutes

Ingredients:

  • 1-2/3 cups flour
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1-1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/8 tsp. nutmeg
  • 1/3 cup butter
  • 1/2 cup milk
  • 1/2 cup orange juice
  • 1 egg
  • Any flavor fruit jam

Preparation:

Preheat oven to 400 degrees. Line 12 muffin cups with paper liners and set aside. In large bowl, combine flour, sugar, brown sugar, baking powder, baking soda, salt and nutmeg and mix well.

Using pastry blender or two knives, cut in butter until fine particles form. In small bowl, combine milk, orange juice, and egg and beat well. Add milk mixture to dry ingredients and mix just until blended.

Spoon batter into prepared muffin cups, filling each 3/4 full. Place 1 tsp. jam on each muffin and press into batter slightly with back of spoon. Bake at 400 degrees for 18-25 minutes, until muffins are light golden brown and firm. Serve warm. 12 muffins
