I have a new favorite cheese; aged Cotija, a Mexican cheese that tastes a lot like Parmigiano-Reggiano cheese but is much less expensive.

Prep Time: 10 minutes

Cook Time: 18 minutes

Total Time: 28 minutes

Yield: 8 servings

Ingredients:

  • 1 tube refrigerated breadstick dough
  • 1/3 cup grated Cotija cheese
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried basil leaves

Preparation:

Preheat oven to 350 degrees F. Open the breadstick dough package and divide dough into 8 circles; do not unroll. On shallow plate, combine remaining ingredients. Flatten circles, one at a time, and press one side into cheese mixture. Place, cheese side up, on a cookie sheet. Flatten again with the palm of your hand. Bake at 350 degrees F for 15-20 minutes until golden brown. Cool on wire rack for 5 minutes, then serve.

I've held onto this recipe for a long time, waiting to find the Cotija cheese. Found some around Cinco De Mayo. We loved this. I did sprinkle on just a hint of pepper but it was great! Will be making again.
