Green Rice is an easy and flavorful side dish recipe you can make with fresh or dried herbs. If you use dried, crush them between your fingers before adding to the rice to help release the aromatic oils. Use three times the amount of fresh as you would dried.

Ingredients:
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 cup long grain white rice
- 2 cups chicken broth
- 2 tablespoons butter
- 2 tablespoons fresh or 2 teaspoons dried basil leaves
- 1 tablespoon fresh or 1 teaspoon dried thyme leaves
- 1/4 cup minced flat-leaf parsley
- 1/2 teaspoon salt
- 1/8 teaspoon white pepper
Preparation:
In heavy saucepan, heat olive oil over medium heat. Add onion; cook and stir 4-5 minutes until tender. Add rice; cook and stir 2-3 minutes until slightly toasted.
Add chicken broth; bring to a boil, then cover pan, reduce heat to low, and simmer 18-23 minutes until rice is tender.
Add butter, basil, thyme, parsley, and salt and pepper; remove pan from heat and cover; do not stir. Let stand 5 minutes, then remove cover, stir gently, fluff rice, and serve. Serves 4-6
