There's nothing like the flavor of roasted garlic; it's sweet, nutty, smooth, and suave. It's fabulous in this easy salad dressing recipe. Cotija cheese is a Mexican cheese that can be found in your supermarket's dairy aisle. Substitute Parmesan or Romano cheese.

Ingredients:
- 1/3 cup olive oil
- 10 garlic cloves
- 3 tablespoons white wine vinegar
- 3 tablespoons grated Cotija cheese
- 1/4 teaspoon salt
- 1/2 teaspoon fresh thyme leaves
- dash white pepper
Preparation:
Combine oil and peeled garlic cloves in a small saucepan. Cook over medium heat until the garlic is golden brown (NOT burned), stirring often. This should take about 10 minutes. Let cool completely. Combine oil, garlic, and remaining ingredients in a food processor bowl or blender. Process or blend until mixture is emulsified. Store, covered, in refrigerator up to 3 days.
