Ingredients:
- 2 Tbsp. olive oil
- 3 cloves garlic, minced
- 16 oz. pkg. frozen bay scallops, thawed, patted dry
- 3/4 cup mayonnaise
- 1/4 cup plain yogurt
- 3-4 anchovy fillets, minced, if desired
- 3 Tbsp. grated Parmesan cheese
- 2 tsp. Worcestershire sauce
- 2 Tbsp. Dijon mustard
- 2 Tbsp. lemon juice
- 1/4 tsp. pepper
- 1/2 tsp. dried oregano leaves
- 1 cup garlic croutons
- 10 oz. bag romaine lettuce leaves
- 1/4 cup grated Parmesan cheese
Preparation:
In large skillet, heat olive oil and add garlic. When sizzling, add scallops and cook over medium high heat for 3-4 minutes until opaque. Set aside.
In food processor, combine mayonnaise, yogurt, anchovies, 3 Tbsp. Parmesan cheese, Worcestershire sauce, mustard, lemon juice, pepper, and oregano; blend until smooth.
Place lettuce in a large bowl. Toss with dressing, cooked scallops, garlic croutons and 1/4 cup Parmesan cheese. 6 servings
