Salmon with Spinach Cherry Salad

Salmon with Spinach Cherry Salad is an excellent main dish recipe that's quick, easy, and delicious.

Prep Time: 15 minutes

Cook Time: 7 minutes

Ingredients:

  • 1 cup cherries
  • 1 cup baby spinach leaves
  • 1/2 cup chopped walnuts
  • 5 tablespoons honey French salad dressing
  • 4 salmon fillets

Preparation:

Pit cherries and cut in half. Combine in small bowl with spinach leaves, walnuts, and 3 tablespoons of the dressing; toss gently and set aside.

Preheat broiler. Place salmon fillets on broiler pan and brush with remaining 2 tablespoons dressing. Broil 6" from heat source for 5-8 minutes or until salmon flakes when tested with fork; do not turn during broiling.

Place salmon on serving plate and top with cherry mixture; serve immediately. Serves 4
