Since antipasto typically marinates for a while in the refrigerator, this easy sandwich filling will stay fresh and crisp for a few days.

Ingredients:
- 1 cup Italian salad dressing
- 8 oz. can sliced mushrooms, drained
- 1 red bell pepper, chopped
- 1/4 cup sliced green onions
- 1 green bell pepper, chopped
- 1-1/2 cups cubed hard salami
- 1-1/2 cups cubed Colby cheese
- 1/2 cup black olives, drained
Preparation:
In medium bowl, combine all ingredients and blend gently to combine. Cover tightly and refrigerate. To use, scoop filling out of bowl with slotted spoon. This filling is best served on focaccia bread or inside pita breads.
