Shrimp Salad Sandwich Spread

This crunchy and colorful sandwich spread recipe is a nice change of pace.

Total Time: 20 minutes

Yield: 10 servings

Ingredients:

  • 1 lb. cooked medium shrimp
  • 2 cups finely shredded red cabbage
  • 1 cup shredded carrots
  • 1/4 cup sliced green onions
  • 1/2 cup cashew pieces
  • 1/2 cup mayonnaise
  • 2 Tbsp. lemon juice
  • 3 Tbsp. sour cream
  • 1/8 tsp. pepper

Preparation:

Coarsely chop shrimp and combine in a medium bowl with cabbage, carrots, onions and cashews. In small bowl, combine mayonnaise, lemon juice and pepper and blend well. Add to shrimp mixture and mix gently to blend. Cover tightly and refrigerate.

I tried this recipe because it reminded me of some shrimp tacos I had in California. The cabbage is the ingredient that really makes this sandwich. The whole thing is sweet and crunchy and savory and delicious.
