This crunchy and colorful sandwich spread recipe is a nice change of pace.
Prep Time: 20 minutes
Ingredients:
- 1 lb. cooked medium shrimp
- 2 cups finely shredded red cabbage
- 1 cup shredded carrots
- 1/4 cup sliced green onions
- 1/2 cup cashew pieces
- 1/2 cup mayonnaise
- 2 Tbsp. lemon juice
- 3 Tbsp. sour cream
- 1/8 tsp. pepper
Preparation:
Coarsely chop shrimp and combine in a medium bowl with cabbage, carrots, onions and cashews. In small bowl, combine mayonnaise, lemon juice and pepper and blend well. Add to shrimp mixture and mix gently to blend. Cover tightly and refrigerate.
