Find firm and extra firm tofu in the refrigerated section of your supermarket.

Ingredients:
- 12 oz. pkg. firm or extra firm tofu
- 1/3 cup mayonnaise
- 2 Tbsp. Miracle Whip
- 1 Tbsp. mustard
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1/2 tsp. dried thyme leaves
- 1/2 cup chopped celery
- 1/4 cup green onions
- 1/3 cup grated Parmesan cheese
Preparation:
Drain tofu and press between paper towels to make sure that excess moisture is removed. Combine remaining ingredients in medium bowl until well mixed. Add tofu and stir gently until tofu crumbles and mixture resembles egg salad. Cover tightly and store in refrigerator. 4-5 sandwiches
