German Sausage and Sauerkraut

You can use Kielbasa, Knackwurst, or Bratwurst for this hearty casserole recipe that's perfect for a cold winter night.

Prep Time: 15 minutes

Cook Time: 40 minutes

Total Time: 55 minutes

Yield: Serves 4-6


  • 1 red bell pepper, chopped
  • 1 red onion, chopped
  • 3 cloves garlic, minced
  • 2 Tbsp. white wine vinegar or apple cider vinegar
  • 1 tsp. caraway seeds
  • 1 Tbsp. brown sugar
  • 1 lb. smoked fully cooked German sausage, sliced
  • 16 oz. jar sauerkraut, rinsed and drained


Preheat oven to 350 degrees. Place all ingredients except sauerkraut in a 2 1/2-quart casserole dish that has been lightly coated with cooking spray or oil and mix gently. Cover with rinsed and drained sauerkraut.

Cover the dish and bake at 350 degrees until heated through and bubbly, about 35 to 40 minutes.

Sausage and Sauerfraut Perfection, Guest Denise

This recipe was really fantastic. Perfect with German potato salad and baked beans. I used UPA's sausage from Fredricksberg, TX (very yummy!). This recipe was better than what I had at the restaurant in Fredricksberg where I had their signature sausage.
