This rich quiche is packed full of pizza ingredients! As with any pizza recipe, you could substitute Canadian bacon or cooked ground beef for the pepperoni, and use any kind of cheese you like.

Prep Time: 25 minutes

Cook Time: 45 minutes

Total Time: 1 hour, 10 minutes

Ingredients:

  • 1 9" pie crust
  • 2 cups shredded mozzarella cheese
  • 1 cup shredded Cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 3/4 cup sliced pepperoni pieces
  • 4 oz. jar sliced mushrooms, well drained
  • 1 Tbsp. olive oil
  • 1 finely chopped onion
  • 2 cloves garlic, minced
  • 1 cup whole milk
  • 3 eggs
  • 1 tsp. dried Italian seasoning
  • 2 Tbsp. grated Parmesan cheese

Preparation:

Preheat oven to 400 degrees F. Sprinkle cheeses in bottom of pie crust. Top with pepperoni and mushrooms. In heavy skillet, cook onion and garlic in olive oil until crisp tender. Spoon over mushrooms in pie crust.

Beat together milk, eggs, and Italian seasoning in medium bowl until well blended and pour over mushrooms. Sprinkle with Parmesan cheese.

Bake pie at 400 degrees for 40-45 minutes or until knife inserted near center of pie comes out clean. Let stand for 15 minutes before cutting. Serves 6

super easy and super versatile too!!, Guest nankamo

Loved it, kids loved it too, very easy to put together, and easy to customize with the pizza ingredients that you have on hand. I put it in a 5 qt deep saute' pan and just baked it in the oven in that. I think you could mix some pizza sauce with the meat and onions, just enough to coat and it would be great like that and fresh herbs chopped on top are great too. I will definitely make this again!!
