Cod in Rhubarb Sauce

You can make the rhubarb sauce recipe ahead of time. Store it in the refrigerator. When you're ready to broil the cod fillets, just reheat the sauce over low heat until it's hot.

Prep Time: 25 minutes

Cook Time: 15 minutes

Ingredients:

  • 1-1/2 cups chopped rhubarb
  • 1/4 cup water
  • 2 tsp. grated ginger root
  • 1/3 cup apple cider vinegar
  • 1/2 cup sugar
  • 2 cups water
  • 1 cup chopped red onion
  • 1/4 tsp. salt
  • dash white pepper
  • 4 cod fillets

Preparation:

Place rhubarb, 1/4 cup water and ginger root in small heavy saucepan. Simmer for 5 minutes and set aside. Combine sugar and cider vinegar with 2 cups water and bring to a rolling boil. Add the onion. Cook for 2 minutes, drain well and add to rhubarb. Season with salt and white pepper.

Broil the cod fillets 4-6" from heat for 10 minutes per inch of thickness, or until fish is opaque and flakes easily with fork. Serve sauce with fish. 4 servings
