Ingredients:
- 1-1/2 cups chopped rhubarb
- 1/4 cup water
- 2 tsp. grated ginger root
- 1/3 cup apple cider vinegar
- 1/2 cup sugar
- 2 cups water
- 1 cup chopped red onion
- 1/4 tsp. salt
- dash white pepper
- 4 cod fillets
Preparation:
Place rhubarb, 1/4 cup water and ginger root in small heavy saucepan. Simmer for 5 minutes and set aside. Combine sugar and cider vinegar with 2 cups water and bring to a rolling boil. Add the onion. Cook for 2 minutes, drain well and add to rhubarb. Season with salt and white pepper.Broil the cod fillets 4-6" from heat for 10 minutes per inch of thickness, or until fish is opaque and flakes easily with fork. Serve sauce with fish. 4 servings
