Ingredients:
- 1-1/4 lbs. fish fillets, in serving size pieces
- 2 Tbsp. lemon juice
- 1/4 tsp. salt
- 1 Tbsp. butter
- 1 Tbsp. flour
- 1 tsp. curry powder
- 1/2 cup chicken broth or fish stock
- 1/3 cup mango chutney
- 1/2 cup halved red grapes
- 3 Tbsp. chopped parsley
- Toasted coconut or chopped peanuts
Preparation:
In 2 cup microwave safe glass measuring cup, melt butter. Add flour, salt and curry powder and blend well. Add broth and stir to blend with wire whisk. Microwave uncovered on high power, stirring every minute, until sauce is thickened, about 2-3 minutes. Stir in chutney and grapes, then pour sauce over fish, sprinkle with parsley, and serve with coconut or peanuts. 4-6 servings
