Honey Orange Fish Fillets

At a baseball tailgating party, one of the guests used orange instead of lemon to season fish cooked on the grill. I love the sweet and tangy taste of orange with mild fish.

Prep Time: 10 minutes

Cook Time: 12 minutes

Ingredients:

  • 3 Tbsp. frozen orange juice concentrate, thawed
  • 1 Tbsp. oil
  • 2 Tbsp. honey
  • 1/2 tsp. dried dill weed
  • 1/8 tsp. white pepper
  • 1/2 tsp. salt
  • 1/2 tsp. orange zest
  • 1 lb. haddock or halibut fillets

Preparation:

Combine all ingredients except fillets and pour over fish in glass baking dish. Cover and chill at least one hour.

Remove fish and reserve marinade. Grill or broil fish 4-6" from heat source, turning once and brushing with marinade, until fish is thoroughly cooked and flakes easily when tested with fork, about 12-15 minutes. Discard remaining marinade. 4 servings
