Ingredients:
- 2 Tbsp. olive oil
- 8 orange roughy fillets
- 2 red bell peppers, sseeded and sliced
- 1 tsp. dried thyme leaves
- 2 Tbsp. lemon juice
- 1/2 tsp. salt
- 1/8 tsp. pepper
Preparation:
Heat olive oil in heavy skillet. Add bell peppers and cook and stir over medium high heat for 2-3 minutes. Place fillets over peppers and sprinkle with thyme, lemon juice, salt, and pepper. Lower heat to medium low, cover skillet and cook 12-18 minutes, shaking pan occasionally, until fish flakes easily with fork. Serves 4-6
