Red Snapper Veracruz

You can use other fish fillets in this delicious and healthy recipe; orange roughy or grouper would be delicious.

Prep Time: 25 minutes

Cook Time: 18 minutes

Ingredients:

  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 Tbsp. olive oil
  • 1 Tbsp. butter
  • 14 oz. can diced tomatoes, undrained
  • 1 cup chunky salsa
  • 1 Tbsp. tomato paste
  • 1/2 cup flour
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 2 tsp. chili powder
  • 2 lb. red snapper fillets, cut into serving size pieces
  • 3 Tbsp. oil
  • 1/4 cup sliced green or black olives

Preparation:

In a medium skillet, saute onion and garlic in olive oil and butter until tender, about 5 minutes. Add tomatoes and simmer for 4-5 minutes until blended. Add salsa and tomato paste and cook 1 minute longer. Remove from heat and cover to keep warm.

Combine flour, salt, pepper, and chili powder in a shallow pan. Coat fish with flour mixture. Heat 3 Tbsp. oil in a heavy skillet and fry the fish in oil 4-5 minutes on each side until fish is golden brown and flakes easily when tested with fork. Place cooked fish on serving plate and spoon sauce over fish. Garnish with olives. 8 servings
