Ingredients:
- 2 Tbsp. olive oil
- 1 Tbsp. lemon juice
- 1 tsp. dried dill weed
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 4 carrots, sliced
- 2 potatoes, thinly sliced
- 1 onion, chopped
- 1 lb. halibut fillets
- 2 tomatoes, chopped
Preparation:
In large skillet, heat olive oil. Add lemon juice, dill weed, salt and pepper, then carrots, potatoes, and onion. Cover skillet and cook mixture for 8-10 minutes, stirring frequently, until crisp tender. Add fish to skillet. Cover and cook 5 minutes longer. Then add tomatoes to skillet and cover again. Cook until fish flakes when tested with a fork, 2-3 minutes longer. Serves 4
