Shrimp is one of the original quick cook foods. In fact, if you cook shrimp too long it will become rubbery and tough. Fresh shrimp need only a couple of minutes of sautéing on each side, until they turn pink and curl.
Shrimp pair beautifully with many ingredients, flavors, and ethnic cuisines. They are the perfect addition to a stir-fry, can be served in tacos or fajitas, and make the best appetizers. When you buy shrimp, look for shells that are attached tightly to the body, and a fresh scent. The shrimp should not be soft or slimy, but firm and slightly springy. Most shrimp you buy these days has been frozen right on the boat. Frozen shrimp is usually a better buy than shrimp on ice at the butcher's counter.
