This simple four ingredient side dish recipe will add zip to any family dinner.

Ingredients:
- 3 cups sliced carrots OR 10 oz. pkg. baby carrots
- 1/3 cup apple juice
- 2 tablespoons apple jelly
- 1 Tbsp. Dijon mustard
- 1/4 tsp. salt
- 1/8 tsp. pepper
Preparation:
Place carrots and juice in medium saucepan and bring to a boil. Reduce heat, cover pan, and simmer for 6-8 minutes until carrots are tender. Uncover and add jelly, mustard, salt, and pepper. Cook over medium heat, stirring frequently, until carrots are glazed. 4-6 servings
