Crockpot Scalloped Corn

Egg product is used in this recipe instead of real eggs because they can stand up to long, slow cooking better.

Prep Time: 20 minutes

Cook Time: 3 hours

Ingredients:

  • 2/3 cup flour
  • 1/3 cup butter, melted
  • 1 cup cholesterol-free egg product or 4 eggs
  • 3/4 cup evaporated milk
  • 1 Tbsp. sugar
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 14 oz. can cream-style corn
  • 2 cups frozen corn, thawed and drained
  • 1 tsp. dried thyme leaves

Preparation:

Spray inside of 3-4 quart crockpot with nonstick cooking spray. Combine all ingredients in prepared crockpot and stir to mix. Cover slow cooker and cook on high for 2-3 hours until set. Serves 8
