I really have to have sweet potatoes with any holiday meal. The rich taste and creamy texture compliment just about any meal! When my husband was going to classes for his Master's degree at night, I used to make a batch of sweet potatoes and eat them all myself as dinner. (He doesn't like them, obviously! But you will.)
Prep Time: 25 minutes
Cook Time: 7 hours
Ingredients:
- 2 lbs. sweet potatoes, peeled and cut into chunks
- 3 cloves garlic, minced
- 3/4 cup apricot pie filling
- 3 Tbsp. butter, melted
- 1/3 cup honey
- 1/4 cup brown sugar
- 1/2 tsp. salt
- 1/4 tsp. white pepper
Preparation:
Place potatoes in 3-1/2 to 4 quart crockpot. Sprinkle with garlic. In medium bowl, combine remaining ingredients and blend well. Pour into slow cooker. Cover and cook on low for 6-8 hours or until potatoes are tender and glazed, stirring once during cooking time. 6-8 servings
