Crockpot Rice Pilaf

This fabulously easy recipe is a great way to cook rice for a family meal, or for company.

Prep Time: 10 minutes

Cook Time: 2 hours

Ingredients:

  • 2 (14 oz.) cans ready to serve chicken broth with roasted garlic
  • 1-2/3 cups water
  • 3 cups long grain brown rice
  • 1/2 cup minced onion
  • 1/4 tsp. pepper

Preparation:

Combine broth and water in a 4 cup glass measuring cup and microwave on high until very hot, about 5 minutes.

Spray 3-1/2 quart slow cooker with cooking spray. Combine rice, onion, and pepper in slow cooker and mix to combine. Pour hot broth mixture over and cover crockpot. Cook on high for 1-1/2 to 2 hours, until rice is tender. Stir and serve. 12 servings
