Crockpot Gingered Carrots

This super simple recipe is packed full of flavor.

Prep Time: 20 minutes

Cook Time: 3 hours,

Ingredients:

  • 12 carrots, peeled and sliced
  • 1/3 cup Dijon mustard
  • 1/2 cup brown sugar
  • 1 tsp. minced ginger root
  • 1/8 tsp. pepper
  • 1/2 tsp. salt

Preparation:

Combine all ingredients in 3-4 quart crockpot. Cover and cook on high for 2-3 hours or until carrots are tender, stirring twice during cooking. 10-12 servings
