Grilling corn on the cob adds the most spectacular sweet and smoky flavor to this quintessential vegetable of summer.

Prep Time: 5 minutes

Cook Time: 12 minutes

Total Time: 17 minutes

Yield: 8 servings

Ingredients:

  • 8 ears corn on the cob
  • butter, salt, and pepper

Preparation:

Carefully peel back husks from corn, leaving them attached at the base. Remove silk from corn and discard. Smooth husks back over corn and tie with a piece of string to keep closed. Soak corn in cold water for 1 hour. When ready to grill, drain corn, shaking and squeezing off excess water. Place on grill 4-6" from medium high coals and grill for 12-18 minutes until corn is tender. Turn corn frequently while cooking. Remove string and peel back husks to serve.

Note: adding salt to the water for soaking the corn can make the kernels tough.

Cooking corn in the husk is the best way both flavor wise and health wise to cook corn but to take the silk out before cooking is a total waste of time. Soaking the corn helps tremendously but I like to use sea water best. This will greatly inhance the flavor of the corn. I like to grill the corn until the outer husk is black on all sides then I know it's done. I've cooked it this way at a number of outings and everyone loves it. Thanks
