You can leave out the bacon for a vegetarian dish.

Ingredients:
- 2 cups peeled, cubed potatoes
- 1 large onion, chopped
- 1-1/2 cups thinly sliced carrots
- 2 Tbsp. water
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 6 slices bacon, cooked crisp and crumbled
- 2 Tbsp. butter
Preparation:
Prepare and heat grill. In a 3 quart microwave safe casserole dish, combine potatoes, onions, carrots and water. Cover and microwave on HIGH for 5-6 minutes or until vegetables are hot and just beginning to cook, stirring once. Drain. Stir in salt and pepper.Place potato mixture on an 18x18" square of heavy duty foil. Top with bacon and dot with butter. Wrap securely with double fold seal. Place on grill 4-6" from medium high coals. Cook 25-30 minutes or until vegetables are tender, moving packet around on grill occasionally. 8 servings
