Peas and Corn

While they are both everyday ingredients, this combination of peas and corn mixed together is not common at all. The bright green and vibrant yellow of the peas and corn together really stands out. Their texture and flavors are complementary as well. The two veggies are sweet, small, plump, and perfect when mixed together with butter, garlic salt, and thyme. You can use other seasonings if you'd like; add some garlic powder, or use basil or marjoram in place of the thyme leaves.

Serve this easy and super quick recipe alongside everything from roast chicken, meatloaf, or grilled steak or piece of fish. 

This recipe calls for frozen vegetables, which make it the perfect side dish for any time of year. However, don't shy away from using fresh corn and or fresh peas during the peak summer season. The flexibility of this recipe is great. You can add in other seasonal (or prepared) produce, like chopped fresh tomatoes, roasted red peppers, or fresh basil to the bowl. 

Ingredients

  • 2 cups baby peas, frozen

  • 2 cups frozen white and yellow corn

  • 2 tablespoons unsalted butter

  • 1/2 teaspoon garlic salt

  • 1/2 teaspoon dried thyme

Steps to Make It

  1. Place the peas and corn in a microwave safe casserole dish. Sprinkle the vegetables with 1/4 cup water.

  2. Cover the casserole with plastic wrap or the lid, pull back one corner to vent, and microwave the vegetables on high for 6 minutes. Stir the vegetables gently. Then microwave the peas and corn, uncovered, for 2 minutes longer.

  3. Drain the vegetables well and return them to the casserole dish. Add the butter and seasonings to the vegetables. Stir gently, then microwave, uncovered, for one minute longer, or until the butter is melted and the vegetables are hot. Let stand for 2 minutes on a solid surface so the heat distributes evenly, stir gently, and serve immediately.

Tips

  • If you are making this with fresh ingredients, you can still use the microwave to warm the corn and peas. Simply shuck the corn cobs and cut the corn kernels off the cob. Fresh corn barely needs cooking. Shell the peas. Then add both the corn kernels and shelled peas to a microwave safe dish and proceed with the recipe until the vegetables are hot and the butter is melted. 
  • If you have any leftovers, you can store this dish in a sealed container in the refrigerator for a few days. If you're feeling creative, add a few other veggies to the mixture or pour it into a salad as an extra topping. Another idea is to add it to cooked potatoes for a colorful hash.
