This combination of vegetables is not common at all, which surprised me when I searched for it. I love the colors of these two vegetables together, and their texture and flavors are complementary as well.

Prep Time: 4 minutes

Cook Time: 10 minutes

Total Time: 14 minutes

Yield: Serves 4

  • 2 cups frozen baby peas
  • 2 cups white and gold frozen corn
  • 2 Tbsp. butter
  • 1/2 tsp. garlic salt
  • 1/2 tsp. dried thyme leaves

Place peas and corn in microwave safe casserole dish. Sprinkle with 1/4 cup water. Cover and microwave on high for 6 minutes. Stir vegetables. Microwave, uncovered, for 2 minutes longer. Drain well and add butter and seasonings to vegetables. Stir gently, then microwave, uncovered, for 1 minute longer until butter is melted and vegetables are hot. Let stand for 2 minutes, stir gently, and serve.

Peas and Corn review, Guest Tanya

We were trying to go ""simple but elegant"" for our NYE dinner this year, so went with filet mignon with balsamic syrup and goat cheese (courtesy of Giada), duchess potatoes (courtesy of the Titanic cookbook) and this dish. We were pretty much thinking it would be a slight twist on peas and corn with butter. This dish was amazing. Not only was it incredibly simple to make (all microwave), it was quite tasty and the thyme added another dimension. We both agreed that it was a standout and will definitely make it again. Worth the little time and small cost to check it out for sure.
